Vegan Thyme Biscuits & Gravy

Yield: enough for 2-4 people


Time: less than 40 minutes


Biscuit Ingredients:

  • 2 cups flour

  • 1 tablespoon baking powder

  • 1 tsp salt

  • ⅓ cup vegetable shortening

  • 1 cup vegan milk - I used oat milk

  • 2 teaspoons thyme


Gravy Ingredients:

  • 2 cups veggie broth

  • ¾ teaspoons onion powder

  • 3 tablespoons nutritional yeast

  • 1 tablespoon soy sauce

  • ½ teaspoon dijon mustard

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • ½ teaspoon paprika

  • ¼ cup flour


Steps:

  1. Preheat the oven to 425 degrees and gather the biscuit ingredients - you’ll start on the gravy just before the biscuits are finished in the oven

  2. Combine all dry ingredients

  3. Add shortening and mix with fingertips making crumbs until the shortening and flour are mostly mixed together

  4. Add the milk and gently fold and stir until there’s a mass of sticky dough

  5. Flour a work surface and dump the dough on it - pat the dough down into a circle that’s about 6 inches across and then cut your biscuit into even circles

  6. Line a baking sheet with parchment paper and place your biscuits on the sheet to bake for 20-25 minutes

  7. Start to gather your gravy ingredients - the gravy comes to together in less than 5 minutes so time accordingly

  8. Add all the gravy ingredients to a saucepan and bring to a boil, lower temperature, continue to whisk until desired thickness is reached and remove from heat

  9. Plate the biscuits, cover with gravy, enjoy!







Biscuits and gravy is absolutely in my top 10 favorite meals and I wish it was more normal for vegetarian gravy to be an option at restaurants but nooooooooo EVERYTHING HAS TO BE MEAT BASED. I have a whole post dedicated to veggie broth so I’ll keep this short: don’t buy veggie broth. It’s literally the easiest thing to make and you probably have everything that you need for it in your fridge already. Check out the blog post (it’s under Other Fun) if you want more information. This dish was really easy to make and super delicious. This biscuit recipe is exactly the same as my gluten-free biscuit recipe with the obvious exception of the flour and if you used a gluten-free flour in the gravy as well, this could totally be made to be gluten-free.
