Vegan Stoner Nachos

Total Time: The cashews need to soak for at least four hours but otherwise this can come together in less than 40 minutes

Ingredients Needed: cashews, nutritional yeast, lemon, paprika, garlic powder, onion powder, turmeric, jalapenos, vinegar, sugar, garlic, avocado, onions, cilantro, cherry tomatoes, cayenne, lime, black beans, Spicy Sweet Chili Doritos

Yield: This recipe is perfect for two very hungry people or four people wanting a snack

Cashew Queso:

  1. Soak 1 cup cashews with water for at least four hours or overnight

  2. Strain cashews and put in food processor or blender with the juice from ¼ - ½ of a lemon and puree till the cashews are creamy

  3. Add ½ cup nutritional yeast, 1 teaspoon paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon turmeric, ½ teaspoon salt, and 1 cup of water to your food processor and continue to mix until queso consistency is reached

  4. Set aside

Caramelized Onions:

  1. Peel and cut one onion into thin half rings

  2. Saute with ½ cup vegetable oil on medium till browned - after 15 minutes

  3. Use tongs and strainer to remove onions from heat and to strain excess oil

  4. Set aside

Quick Pickled Jalapenos:

  1. In a saucepan combine ½ cup vinegar, ½ cup water, 1 tsp sugar, and 3 cloves of garlic - boil and add 1-2 jalapenos that have been cut

  2. Let simmer for 8 minutes, transfer to different container and let sit in brine till time for assembly


  1. In a bowl combine 1 mashed avocado, juice from ½ a lime, ½ onion diced, 1-2 tablespoons cilantro, 6 cherry tomatoes diced, 3 cloves garlic minced, ½ teaspoon cayenne, ½ teaspoon salt


  1. Heat ½ cup black beans and cashew queso

  2. Evenly layer all your ingredients with a whole bag of Sweet Spicy Chili Doritos, top with additional cherry tomato halves and enjoy!

I am very passionate about nachos and I think it's fair to call myself an expert at this point in my life. If nachos are on the menu then there's at least a 50% chance of me ordering them and there's a 25% chance that I'm not planning on sharing them. My decision to not eat meat (and to consume very little dairy) comes way more from my love for animals and the planet than it does from me caring about what I put in my body. The Spicy Sweet Chili Doritos might not be the healthiest thing out there but technically they're vegan and I will eat them till my dying day. Also, nachos shouldn't be striving to be healthy. This recipe is so easy, just be sure to start soaking your cashews early so your queso is nice and "creamy". TBH though, it's not the end of the world if you don't soak your cashews that long and these nachos will still be bomb if you rush that step. I included a guacamole recipe but everyone and their mom has their own way of making guacamole so let me know how you make yours!
