Total Time: less than 45 minutes
Yield: serves 2-4
Ingredients:
2 small heads of broccoli - roughly chopped
½ yellow onion - diced
4 cloves garlic - minced
2 tablespoons olive oil
4 cups vegetable broth
1 ½ teaspoons curry paste
Salt & pepper
Vegan sour cream - optional for decor
Cilantro - optional for decor
Sriracha - optional for decor
Steps:
In a large saucepan saute the onions and garlic - about 3-5 minutes
Add the broccoli and continue to saute - about 2-3 minutes
Add the broth and the curry paste and stir
Bring to a simmer over medium heat, cover, let simmer for 20 minutes
Prepare blender or food processor
Add soup in batches and puree until smooth
Return soup to a pot and season with salt and pepper
Decorate how you wish - I did strips of vegan sour cream, bits of cilantro, and dots of sriracha

I love soup so much and because the weather was so crappy last night it felt appropriate to make soup for dinner even though it’s almost June.
